Recipe: Zuc Taco Boats



  1. Preheat oven to 400F
  2. While the oven preheats, slice your zucchinis (long ways), then scoop out the insides creating your boat. Save those fillings! Set zucchini boats into a tray and put aside.
  3. Sauté your onion with a splash of olive oil for roughly 2-3 mins
  4. Add in the garlic, ground turkey, zucchini fillings and seasonings. Break up the mix occasionally to help it cook thoroughly.
  5. Stir in tomato sauce, chicken stock, and black beans, and bring to a simmer. Then reduce the heat to medium-low allowing the sauce to reduce for 5 mins.
  6. Remove from heat and add in a handful of cilantro and lime juice. Spoon taco filling into those zucchini boats.
  7. Sprinkle diced tomatoes and cheese over top the boats and place in oven for 10-15mins until zucchini boats are tender.

Remove from oven and enjoy!
